Pico de Gallo Salsa Base
If you have a ton of fresh tomatoes pouring in from the garden/CSA/farmer’s market right now, then you NEED this recipe!!
This is an easy, authentic Mexican salsa recipe called Pico de Gallo (which literally means “beak of the rooster”, but it’s a double entendre because pico can also mean spicy.) I learned this fresh tomato salsa recipe from my Mexican in-laws.
“Yeah, but how am I going to use up all my tomatoes with one appetizer dish?” The cool thing is, with a little customization, you can also use Pico de Gallo as the star of the show for a hearty breakfast, lunch or dinner!
Ingredients:
- 2 tomatoes
- 1/2 a sweet onion
- 1-2 jalapeños
- Handful of cilantro (see photo for amount)
- Juice from 1 lime
- 1-2 tsp white vinegar
- salt, oregano and black pepper to taste
Finely dice the tomatoes, sweet onion and jalapeños and put them in a small bowl. Mince the cilantro and add. Then juice the lime into the bowl, add the vinegar, salt, oregano and pepper and mix lightly with a fork. That’s it!

I prefer to coarsely dice up about 4-5 deep red Roma tomatoes & it also works well
